Featured food of the day mushrooms

We never get tired of mushrooms, for breakfast, eggs, bacon and a hand full of small mushrooms all fried in butter. As a starter or light lunch, a large portabello mushroom, filled with pate and covered in grated cheese. Cook at 200c for 20 minutes on a baking sheet. Add the cheese after 15 minutes cooking. Serve with a mixed salad.

Mushrooms are a low-calorie food usually eaten cooked or raw and as garnish to a meal. Dietary mushrooms are a good source of B vitamins, such as riboflavin, niacin and pantothenic acid, and the essential minerals, selenium, copper and potassium. Fat, carbohydrate and calorie content are low, with absence of vitamin C and sodium. There are approximately 20 calories in an ounce of mushrooms.

Hop over to the video below for a wonderful easy to make recipe.

They look nice mushrooms. I have to carefully budget and I buy the value packs that have different size and shapes. They still taste the same. Val

Hi Val - thanks for your comment.

I totally agree the value, essentials and basics ranges which all of our supermarkets seem to have are a good purchase. The mushrooms don't know they are different shapes and sizes, sure thay may not be so clean and pristine looking, but a quick wipe over and you're ready to go!

All the best Jan

Mushrooms are also a nice addition to any broth. I think a cup of broth is a good warming drink on a cold day or to be part of any meal.

It's weird.... Mushrooms were a no no for me because they had an "antisocial" effect on my digestive system. However, since I've become a LCHF fan I can eat them every day with no probs! Cool :)
