Steamed trout with vegetables poached in white wine

Poached trout

Here is a very nice recipe idea using trout ...
Trout is a favourite fish with anglers, and there are many types of trout found around the globe. Rainbow trout is a fish native to the USA and is popular with fish farmers because it is relatively easy to breed. Steel-head trout, is a sea-going rainbow trout, and is also found in the USA. 

Brown trout, which can be seen in the image above, is native to the British Isles and is organically farmed, making it readily available. Trout can have an earthy flavour, particularly if caught in the wild, and therefore benefits from citrus and acidic flavours including lemon and capers. Learn more about this fish here.

But here are the ingredients, and method, you need to make this lovely steamed trout dish, so do have your shopping list ready!

Ingredients:
1 onion
1 large leek
1 fennel bulb
1 large carrot or 8 baby carrots
4 x 150g brown trout fillets, skin-on
200ml dry white wine
Sea salt
1 bunch fresh dill, roughly torn
1 star anise
10 coriander seeds
4 lemon slices and finely grated zest to serve


Method:
1.Trim the vegetables, then cut into 2mm thick slices, cutting the onion and leek straight down (strip a few layers off the leek first), the carrot(s) at an angle and the fennel length-ways.
2.Lay the vegetables in a shallow casserole or wide frying pan. Top with the fish fillets, skin-side up, leaving space between each fillet.
3.Pour in the wine, then season with lots of sea salt, the dill and the spices. Pour in 250ml water and put a lid of baking paper, cut to size, on top.
4.Put the pan over a medium heat and bring to the boil, then remove from the heat immediately and leave to stand for 10 minutes.
5.Divide the vegetables among 4 plates, top with the trout fillets, skin-side down, then spoon over some of the juices and dill sprigs from the pan. Add a slice of lemon and some lemon zest to each plate, then serve with homemade salad cream.

Tips:
If you can’t get hold of brown trout, use rainbow trout instead.
The broth is great, so if you have any left over, keep it for soups or fish pies. When cool, keep it in a sterilised container for up to a week in the fridge, or freeze for 3 months.
A dry, light Italian white is spot on for this, both in and with the trout, so chill a gavi.

It's only this past year or so, that I've introduced trout into the 'menu plans' ... I really don't know why I didn't before!!! It does make a lovely fish dish, and is so easy to cook.

I get trout from time to time from the fish van, it has a milder more subtle flavour than salmon. Mainly I grill (broil) them whole, one fish is usually enough for two meals, with toasted almonds and spinach, and yes they do appreciate some lemon juice. We also get smoked trout which is also yummy. Back when I was little my old man took me fishing and sometimes we'd catch them in the New Forest streams, which was probably illegal, but tasty.

We have Rainbow, Brown and German trout in some rivers. They require cooler water. Many are raised in hatcheries to keep the streams stocked for trout fishing is a popular sport.

My dear old dad used to fly fish for trout on a Saturday and often on Sunday morning my mum would cook it for us for breakfast.
It was the most delicious meal and we all enjoyed this.

We do also have fish farms / hatcheries. Fishing is popular with young and old. Eddie enjoys his fishing and has on occasions taken the grandchildren.

Fresh caught trout from your dear dad must have been so tasty. Husband Eddie likes to fish but he has not been trout fishing ... He is fortunate to belong to a fishing club which have some excellent lakes and I often go with him - I'm very good on the landing net!
