Sunday Roast Dinner : The Low Carb Way


take a joint of beef and cook to your preference - I like medium rare



add some lovely Brussels Sprouts flavoured with some shaved Parmesan Cheese

Ingredients:
4 servings 
1¼ lbs (600 g) fresh Brussels sprouts 
2–3 tablespoons olive oil 
1 teaspoon dried rosemary or thyme 
Salt and pepper
3–4 oz. (100 g) shaved Parmesan cheese 
See cooking instructions here

you may also like to serve a few roasted celeriac chunks 
just cut celeriac into rough-shaped chunks and roast for around 40 minutes




and how about a slice of lime and vanilla low carb cheesecake for dessert

Roast beef is my favourite Sunday dinner, though we rarely have a roast on a Sunday so we have it on a different day of the week.

The beef looks yummie but no sprouts if you don't mind. I like the cheesecake idea. I'm off to Knott End chippie in a minute or two - our very occasional treat of haddock, chips and mushy peas.
